Christmas Jello Roll Ups

These colorful marshmallow and jello pinwheels can be made with whatever flavor of jello you want. We used red and green for Christmas, but green and purple would be fun for Halloween, while red and blue are perfect for July 4th!

Instructions:

In a medium-sized mixing bowl, whisk together 1 package of red jello and 1/2 cup of water. Be sure the powder fully dissolves. If you are having a hard time getting the powder jelly crystals to dissolve, pop the bowl in the microwave for 1 minute on high heat.

Top the jello mixture with mini marshmallows and stir them in. Place in the microwave for 1 minute on high heat. Take it out and give it a good stir. Make sure all the marshmallows have melted.

In a medium-sized mixing bowl, whisk together 1 package of green jello and 1/2 cup of water. Add 1 cup of the mini marshmallows and stir them in. Place in the microwave for 1 minute on high heat, then remove and stir. Again, make sure all the marshmallows have melted into the gelatin mixture. Allow the green jello to cool for 5-7 minutes.

Check to make sure the red layer is completely set. If it hasn’t, allow for more time in the fridge. Pour the green layer directly over the red layer and make sure it fully coats the red layer. Place in the fridge for another 55 minutes.

How to make a Jello Roll

Christmas Jello Roll Ups (8)

Remove and use a spatula or knife to loosen the edges of the jello. The jello mix is a bit sticky, but it should lift very easily away from the edges of the pan.Starting at one end, start rolling the jello until it forms a log.

Place the toothpicks along the edge holding the seam down. Cut the strips with a thin knife about 1.5-inch slices. Keep refrigerated until you are ready to serve.

Although we did this recipe as a Christmas one, any flavor/color of jello will work for this dessert. I would suggest making jelly rollups with different colors for the layering so that distinct layers are visible. Different mixtures can be used for all different holidays throughout the year!

  • Place on a cutting board and using a sharp knife, cut in between each toothpick.

  • Keep refrigerated until you are ready to serve.

Notes

  • the time in the fridge is determined by the pan size. If you are using a larger pan, it will take less time to set. If using a smaller one, more time will be needed.
  • I prefer a metal pan to make this dessert. It keeps the bottom layer very cool while you are pouring the hot, second layer.
  • Although we did this recipe as a Christmas one, any flavor of jello will work for this dessert. I would suggest using distinct and very different colors for the layering so that the swirl is visible.
