Hey ya’all, Danielle here again! I have a confession:I’m totally addicted to my slowcooker! For us busy women (or men), it’s just a huge lifesaver. Throw a bunch of stuff in then forget about it a few hours, resulting in a delicious, homemade dinner? I’ll take it! This Tequila Lime Roast was so simple, and hubby loved it for his Father’s Day dinner!
Since my hubby and I are huge foodies, I get kind of nervous on holidays that revolve around him, such as his birthday or Father’s Day. I would hate to ruin a meal on his special day! This year for Father’s Day he wanted a tender and juicy roast with lots of flavor. I automatically thought of using tequila, and went from there to make this so dang juicy and fall-apart amazing!
Honestly, I never used tequila for a red meat before, so was a bit hesitant to try it. I couldn’t believe the flavor, though! Seriously, this will have you begging for seconds (or thirds, as he did)! The other wonderful part? Slow-cooker = super easy for you!
Notes: this was made in our 5-quart slow-cooker. You may need to adjust based on your slow-cooker size.
Ingredients
- Large Roast (ours was about 5 lbs)
- 1 cup Lime Juice
- 1/2 cup Tequila
- 1/2 cup Orange Juice
- 2 tbsp. Cilantro
- 1 small can (4 oz.) Green Chilis, diced
- 1/2-1 tbsp. Chili Powder
- 1/2 tbsp. Garlic, minced
- 1-2 tbsp. Honey
- 1 tsp. Salt
- 3/4 tsp. Pepper
Directions
- Mix the Lime Juice, Tequila and Orange Juice in the slow cooker
- Combine the Cilantro, Green Chilis, Chili Powder, Garlic, Honey, Salt and Pepper in bowl. Rub this mixture all over your roast. Place the roast in your slow-cooker.
- Cook on low for about 6-8 hours, or on high 4-6 hours. Make sure it is fully cooked. Enjoy this flavorful, tender and juicy roast!

Today I made a roast I just put it in the oven. I didn’t have red wine so I decided to use some tequila I had left from the night before when I was drinking it. I got sick too. Anyway after I made my roast and put it in the oven I decided to see who else was doing it with tequila. I made mine slightly different. I roasted two cloves of garlic. So good. I seasoned my beef with salt and pepper the night before. So I sautés an onion in a little oil and butter til golden then set aside in a roasting pan layered with 4 strips of bacon. I seared my beef both sides then added that on top of the bacon and onion mixture. Then I seared don’t diced celery after each addition of a seared veggie I added it to my roasting pan searing and sautéing each individual vegetable so then I seared my baby bunch of radishes and then mushrooms and finally my carrots. Once everything was seared I deglazed the pan with a 1/4 cup of tequila once all the bits were removed I added a tablespoon of balsamic vinegar and 2 or 3 cups of beef broth I’m not sure because I didn’t measure anyway I added that to my roast and one spring onion then wrapped it up in foil very very tightly and it’s cooking at 325 for 3-4 hours. When the is only 45 minutes to an hour left of cook time I am going to strain and get my radishes out and meat the put it back in the pan with the sauce and add fresh seared carrots and the radishes and some potatoes. I’m not sure how I am going to do the sauce I might just mix butter and flour together then whisk that into the sauce then add very thing back and let it cook for an hour wrapped again in for an hour. Actually I’m about to take some of the radishes out now so they don’t get mushy during that last hour

I for but I added thyme and a little oregano both fresh. I cooked the tyhme for a sec in my pan when I was searing the roast to bring out the flavors and I seasoned the veggies roast and broth ice everything was ready to go in the oven. I just removed some of the radishes sand mushrooms and I tasted the broth and man it is off the chain fr fr.

I love my slow cooker too it sure frees up a lot of time. This looks so delicious and I will have to give it a try as I have never made a roast in my slow cooker yet

I’ve never come across a Recipe with Tequila and Roast in the same recipe. The fact that you cook it in a Slow Cooker is even better. This Roast looks so delicious – it makes your mouth water. I pinned it to my Food Board so I wouldn’t lose the recipe so I could share it with my Mom. Thanks.

Wow very unique and different flavor from what my family is use to but we love to try new recipes. And I love slow cooker recipes, the meat is always so tender and soft. And you can set it in the slow cooker and do other things, huge time saver.
